Comfort Food
So, University Vegetarians went to Austin’s Pizza last night, and it was delicious! I always get the Vegetated pizza because the veggies are super fresh. It got me thinking about some of my favorite meals and comfort foods. Some comfort food would be great right now with the rain pouring down today.
I went straight to my home-girl Martha Stewart, because I have never had a bad...

Fall's Fruit: Alternative Pumpkin Usage.
What better way to celebrate the season than with Fall’s most memorable fruit, veggie, squash, the pumpkin! Lately, I have become bored with the usual fall pumpkin recipes that include breads, pies, soups, etc. You get the idea. So, I am posting two recipes (one vegetarian and one vegan) that are alternative ways to use pumpkin this fall.

Pesto!
This goopy-green stuff was probably sent from the gods. Pesto ranks among some of the best food ever! Why you ask? Well, not only is it super easy to make, but it can be used to add flavor and substance to almost anything (pizza, wraps, pasta, crackers, eggs, baked potatoes, etc.). AND it stores really well in the freezer. So, you can make a ton when you have free time and have it for the entire...

Famous Vegetarians: Antoni Gaudi
“You can eat it, Don Antoni,” Catalina implored Gaudi, “I promise. It’s home-made and it’s pure pork!”
“Thank you, Doña Catalina,” he replied. “Unfortunately it’s the very purity that prevents me from eating it.”
-Antoni Gaudí (1852-1926)
Architect
(If you have never heard of him I would strongly suggest looking up him and his work. He had a unique style, life and even death.)

HOT
So I recently read an article from NPR online called Confessions of a Sriracha Fanatic. My favorite quote being: “I looked in the mirror and took a deep breath as I wiped a trail of red sauce dribbling from my mouth.” For those not familiar with the Sriracha, it is a great hot sauce that you can add to almost any dish you want to spice up.
I know (from experience) that sometimes...

Summer Tomatoes
Ok, I know summer is almost over, but let’s be honest, even with this week’s cool-front Texas will probably be hot at least another month. During the hot summer months, mouth watering tomatoes come into season.
Martha Stewart’s website has a little article just for tomatoes (http://www.marthastewart.com/photogallery/tomatoes). Even though Martha is not vegetarian or vegan,...

I hope everyone’s week is going o.k. Professors seem to pack in a lot of projects/work/tests right before a break. I guess that’s what makes them even more rewarding. I haven’t talked to anyone yet who isn’t excited for Spring Break.
In honor of a warm, sunny, and fun (hopefully) Spring Break, I am attaching a some recipes (Vegan and Vegetarian) in case anyone wants to...
